
 
		INSIDE OUT QUINOA BURGER  
 RECIPE  
 (True Food Kitchen) 
 Serves 2–4 
 INGREDIENTS:  
 Quinoa Burger Patty: 
 2 tbsps. extra virgin olive oil 
 1 tsp. lemon juice 
 ½ tsp. red chile flakes 
 2 whole eggs, fully beaten 
 4 cups cooked red quinoa 
 1 tsp. ground cumin 
 1 tbsp. mint leaves, minced 
 1 tbsp. oregano leaves, minced	 
 1 tsp. kosher salt 
 Small pinch fresh ground black pepper 
 ¼ cup gluten-free breadcrumbs 
 BURGER ACCOMPANIMENTS: 
 4 slices tomato 
 4 slices cucumber 
 2 torn leaves butter lettuce 
 6 slices red onion 
 2 tsps. feta cheese 
 1 tsp. olive oil 
 1 pinch salt 
 ½ tsp. lemon juice 
 2 tbsps. prepared hummus 
 2 tsps. prepared tzatziki 
 Gluten-free rolls (optional) 
 INSTRUCTIONS:  
 Quinoa Burger Patty: 
 * Combine olive oil, lemon juice, chile flakes,  
 eggs and whisk all together. Set aside. 
 * In a separate container, combine quinoa,  
 cumin, mint, oregano, salt and pepper.  
 Combine wet ingredients with quinoa mix,  
 combine until evenly incorporated. Once  
 quinoa mixture is evenly combined, fold in  
 breadcrumbs. 
 * Press 1/3 cup mixture each into four ring  
 molds, gently pressing down the edges of  
 each. Bake at 350° for 14 minutes. Can be  
 held in refrigerator and reheated if needed. 
 Inside Out Quinoa Burger: 
 * In mixing bowl, toss tomatoes, onions,  
 cucumber, lettuce, feta cheese with olive  
 oil, lemon juice and salt. 
 * On bottom “burger” patty, top patty with  
 1 tbsp. of hummus. Place tossed veggies on  
 top of patty. Garnish veggies with tzatziki.  
 Top with other patty. 
 * (Optional) Put individual patties, hummus  
 and vegetables on four gluten-free rolls and  
 top with tzatziki.
