A lot, if it’s a grape seed. This issue’s cover shot honors the essence of one of the many characteristics that make Napa Valley unique. The grape seed has established an agricultural region so rich in culture and benefits that more than four million people visit it every year to experience what many locals don’t take for granted: good health, good spirit and good times. That doesn’t mean we don’t work hard. On the contrary, a lot of work goes on behind the scenes to make wine presentation seem effortless. And more and more wineries are increasingly finding ways to be environmentally friendly and developing collaborative efforts to recycle materials and waste. One local food purveyor is reducing waste at wineries by not only taking the pumice and pressing grape seeds into healthy cooking oils, but is now taking the cake byproduct of that process and milling it into flour. Valentin and Nanette Humer’s business, Food and Vine, makers of Salute Santé Grapeseed Oil and now grapeseed flour, has been paving the way to an alternative healthy cooking method for the past twenty years. Read about how this revolutionary new product may change the way we eat bread and baking items in the future. Until baking with grapeseed flour catches on with the masses, there are many people out there who have a wheat allergy or are gluten-intolerant. I have many friends who have an aversion to wheat, but like to dine out. Fortunately the Napa Valley has many restaurants creating dishes that are gluten-free—but which ones? Paul Franson and I searched and were surprised at how many choices there are—from restaurants like C Casa that are 100 percent gluten-free to ones like Hurley’s in Yountville that offers a separate menu of gluten-free choices. Hey, it’s summer in the Napa Valley. Time to visit our local farmers’ market for fresh locally grown and organic produce. Here’s to our health and happiness.
