Garden OverlOad Turns inTO rich sOup I’m at it again, trying to grow zucchini in our foggy “summer” weather here in Pinole. I don’t have high hopes for this crop, which never seems to flourish in our garden. Not to worry- friends usually have some spare veggies to pawn off on me. In a hurry one day to make something quick, I remembered I had some artichoke hearts from Trader Joe’s in the freezer. Good stuff- their texture is much better than their canned cousins. Fresh artichokes could’ve worked in this recipe too, if you want to go to the extra work. I didn’t! I also wanted to make something with roasted garlic. Only easier. I didn’t want to roast the whole head of garlic, skins on and all, and then squeeze the soft, 54 MARKETPLACEcontrac osta .com july 2015 By Jennifer cOTe roasty garlic “meat” out onto bread and such. That’s great for other occasions, but not when you’re in a hurry. So I just “roasted” several peeled garlic cloves with the zucchini, letting them roast/stew/cook for 30 minutes or so. A blender turned these few ingredients into a wonderful soup. A favorite garden herb might be added too. Chunks of chicken could even elevate it to main dish status.
