Chef’s featuring Gail Price Italian Holiday Biscotti Recipe WHAT YOU’LL NEED: • 1/2 cup vegetable oil • 3 eggs • 1/2 cup of sugar • 1 teaspoon Anise extract • 1 teaspoon Vanilla extract • 1 tablespoon bourbon or whiskey (optional) • 3 1/4 cups all-purpose flour • 1 tablespoon baking powder DIRECTIONS: Preheat the oven to 375 degrees. Grease cookie sheets or line with parchment paper. In a medium bowl, beat together the oil, eggs, sugar and anise and vanilla until well blended. Combine the flour and baking powder, stir into the egg mixture to form a heavy dough. Divide dough into 2 pieces. Form each piece into a roll as long as your cookie sheet. Place roll onto the prepared cookie sheet, and press down to 1/2-inch thickness to make a long oval flat loaves. Bake for 25 to 30 minutes, until golden brown. Remove from the baking sheet to cool on a wire rack. When the cookies are cool enough to handle, slice each one crosswise into 1/2-inch slices. A serrated bread knife or a pizza cutter make cutting easier. Place the slices cut side up back onto the baking sheet. Bake for an additional 5 to 10 minutes on each side. Cookie slices should be lightly toasted. Slivered almonds may be added to the dough, or the biscotti may be dipped in chocolate once it’s baked. Almond extract may be used instead of vanilla. Store in an airtight container. See you there! The Top Shelf musical singers and dancers have been dazzling the music scene for years. The cost of admission is $35 in advance and $40 at the door. Dinner will be served from 6:00 PM until 7:00 PM ONLY. The Ball affords seniors an opportunity to “dress up” in their finest, be served dinner at their tables, meet old friends, make new friends and just enjoy themselves.
