APRIL 2017 MARKETPLACECONTRACOSTA.COM 55 Chef’s by Jojo Soriano Poached Eggs on Quinoa Cake Fritters WHAT YOU’LL NEED: • Two 5-Minute Poached Eggs • Red Quinoa • Pineapple • Kale • Fresh Cilantro • Whole Cranberry • Tofu Garbanzo cake fritters • Sautéed Oyster Mushrooms • Walnut Oil DIRECTIONS: Crack two pasture raised chicken eggs in a bowl. Boil water, then turn to simmer. Gently poach two eggs, cover for 5 minutes. Remove and soak in cold water, drain and set-aside. Cook red quinoa, 1 part quinoa 2 parts water, boil then simmer until water is fully absorbed. Blanch chopped kale for 1 minute in boiling water. Add chopped fresh pineapple, cilantro, lightly fried and cubed organic tofu, garbanzo beans, whole cranberries, kale. Mix in 1 egg with 4 tbsp of quinoa fritter mixture, and pan fry. Sautee sliced oyster mushrooms with olive oil. Splash marsala wine, salt and pepper to taste. Add to top of quinoa cake fritters. Place poached egg on each cake fritter. Drizzle walnut oil, dust with ground black pepper and enjoy!
